The University of Cape Coast has introduced a comprehensive on-line course in Food Safety & Food Quality Standards, which is designed primarily for students who will be pursuing Bachelor’s degree in Agriculture from the 2014/2015 academic year. UCC Students pursuing programmes in Food & Nutrition, Biochemistry, Hospitality among others could take this course.
The on-line course could also be subscribed to by students from other institutions such as the University of Ghana, Kwame Nkrumah University of Science and Technology and the University of Education, Winneba studying in the areas related to Food Safety and Quality Standards as well as private practitioners who deals with Food Safety and Quality Standards. The course is intended to highlight the importance of Food Safety and Food Standards; Food Safety Threats, their Prevention and Handling and Food Standards. It is also aimed at analysing the National Food Standards and Laws-The Case of Ghana and Compliance with Standards.
UCC will host the course on its website in partnership with sponsorship from the Food & Agriculture Organisation (FAO), German Technical Cooperation (GiZ) and Standard & Trade Development Facility (STDF). As the mode of delivery of the course is online therefore, the interaction between the e-tutors and students would be done with Internet connectivity to the Moodle learning management system (LMS).
As part of preparation for the launch, the facilitators of the course had a discussion with the Pro-Vice-Chancellor, Prof. John Nelson Buah to present the course content, the modalities for delivery, lesson activities and award of marks. The facilitators of the course are Prof. Joseph Adjei Kwarteng, Prof Fred Odoi, Rev. Prof. Owusu Sekyere and Dr. Albert Obeng Mensah with Mr. John K.E. Edumadze as the Technical Coordinator and Mr. Daniel Essel as his Assistant.
Prof. Buah commended the team for the commitment and hard work which had culminated into this flagship course. He noted that “this is part of the manifestation that UCC is indeed the University of Choice and an academic centre of excellence.” He urged all departments to begin developing their courses into on-line modules for their students.
